Maple Cranberry Oat Cups

Time: 15 minutes

Yield: 6 

Ingredients:

  • 2 cups rolled oats
  • 3 cups water
  • 3/4 teaspoon cinnamon
  • Optional toppings: sliced banana, dried fruit, almond slices, chopped nuts, coconut

Directions:

  1. Line a muffin tray with cupcake wrappers or grease with non-stick spray and set aside.
  2. Place the oats and water in a medium pot and cook according to oat directions. Stir in the cinnamon and syrup. Add the desired toppings.
  3. Spoon into the prepared tray and place in the freezer. Once frozen, remove from muffin tray and place frozen oat cups in a freezer bag.
